Here's some themes that you could look into:
Mario Kart, Superheros, Mortal Kombat - each team will pick one character and then battle against another character
I would pick Mortal Kombat since its more fitting for a dodgeball tourney as you're 'fighting' against your opponent. Also will bring back memories from many of the players' childhood heroes.
